THE LOBSTER MUSSEL
We have collected this resource close to home, in the fishing port of Lorient. It is production waste from an agro-food company and more particularly French Breton lobsters caught under the French flag and under French landing. This first "Shellfish and crustaceans" model is associated with recycled bouchot mussel shells from Morbihan (also production waste).
CHEZ BOULAN - A FAMILY STORY
Rewarded many times at the Paris agricultural competition, Boulan oysters won the Excellence prize in 2006.
"It is thanks to my father, Alain Boulan, that we are where we are today. At the age of 12, my father, Alain Boulan, learned the oyster farming profession on his father's barge, Charles, in a magnificent setting, but the hard way. At the time, the handling was manual, we are in the middle of the 50s. Cap Ferret is a wonderful Eden, carefree reigns, France is coming out of the war, everything is beautiful, a dream life without a doubt. The years pass, the hut grows, Alain launches the retail sale and proposes the oysters opened a few years later. To say that his grandmother Elisabeth Castandet had already taken over after the death of her man in Verdun during the First World War... All this to tell you that our history has been intimately linked to oyster farming for four generations. Each time our destiny has caught up with us since our lives did not necessarily take this path, except for Alain, as if life, the real one, was on these parks. Today the hut is identical to what my father had realized. The techniques are the same, as are the parks. On the other hand, since 2007, it is possible to spend a moment in the garden or near the wood stove in winter, sitting facing the sea, with our oysters, white or rosé wine as well as some shrimps and whelks depending on the season. ABALONES – BRETAGNE
We recovered abalones from Sylvain Huchette, one of the last two abalone breeders, after the glass designer Lucile Viaud used them. They give the grey-blue colour to the bottom of our glasses. As part of a partnership with Tomy, we recycle scallops caught by hand in the Bay of Saint-Malo. Tomy recovers its scallops in an environmentally friendly way, fishing them by hand without damaging the bottom and throwing those that are unfit for consumption directly back into the sea.
