SCALLOP SHELLS - ST MALO - BRITTANY 
We collected them from Tomy Journaux. Tomy fishes his scallop shells by hand in the bay of Saint-Malo. His fishing method is respectful of the environment and its resources. After being sublimated on the plate by his partner restaurateurs, we collect the shells to enhance them.

CHEZ BOULAN - A FAMILY STORY
Rewarded many times at the Paris agricultural competition, Boulan oysters won the Excellence prize in 2006."It is thanks to my father, Alain Boulan, that we are where we are today. At the age of 12, my father, Alain Boulan, learned the oyster farming profession on his father's barge, Charles, in a magnificent setting, but the hard way. At the time, the handling was manual, we are in the middle of the 50s. Cap Ferret is a wonderful Eden, carefree reigns, France is coming out of the war, everything is beautiful, a dream life without a doubt. The years pass, the hut grows, Alain launches the retail sale and proposes the oysters opened a few years later. To say that his grandmother Elisabeth Castandet had already taken over after the death of her man in Verdun during the First World War... All this to tell you that our history has been intimately linked to oyster farming for four generations. Each time our destiny has caught up with us since our lives did not necessarily take this path, except for Alain, as if life, the real one, was on these parks. Today the hut is identical to what my father had realized. The techniques are the same, as are the parks. On the other hand, since 2007, it is possible to spend a moment in the garden or near the wood stove in winter, sitting facing the sea, with our oysters, white or rosé wine as well as some shrimps and whelks depending on the season.
